Homemade peach salsa

Homemade peach salsa

Add some freshness to your summer meals and barbecues with this fruity salsa. It's ideal as a fresh side dish, to top a burger with, have with salad, or just to snack on with tortilla chips and a cold beer.

Ingredients

  • 2 ripe peaches, destoned and diced
  • 2 spring onions, trimmed and finely sliced
  • 1 medium tomato, deseeded and finely sliced
  • 1 lime, juice only
  • 1 chilli, finely sliced
  • 1 handful of fresh coriander, finely chopped
  • Salt, to season
  1. Destone and dice the peaches.

  2. Deseed the tomato and discard the seeds. Finely dice the flesh.

  3. Finely slice the spring onion and chilli. Finely chop the coriander.

  4. Mix it all together in a bowl with a good squeeze of lime juice and add salt to taste.
