Mulled Wine

Recipe by The Bay Horse

2 bottles medium red wine
1 orange, with cloves stuck into the skin
2 oranges, sliced
2 lemons, sliced
150g sugar
1 tbsp clear honey
1 cinnamon stick
1 tsp nutmeg

Mulled Wine is very easy to prepare and keeps well. The recipe we use at The Bay Horse is a standard classic recipe. Place all the ingredients into an electric soup kettle (a large saucepan would suffice) and bring to the boil, then simmer for about 20 minutes. The flavours should all be infused at this point and then you can simply reheat for use or keep the contents warm to serve throughout the day.

Season’s Greetings

15ml mulled wine reduction (add ¼ cup of sugar to one cup of mulled wine and reduce to ½ cup)
20ml LBV port
25ml Stolichnaya vodka
10ml lemon juice
Two dashes Fee Brothers plum bitters
25ml apple juice
25ml pineapple juice
Three whole allspices and turkey jerky for garnishing

Add all contents to a cocktail shaker, then shake and fine strain into a chilled cocktail glass. Garnish with the allspice and turkey jerky.
